Princes de Catalogne Collioure
A great favourite of 20th-century painters, who were drawn by the bright Mediterranean light and the warm colours of the buildings, Collioure is the jewel of the rugged Côte Vermeille. It boasts not one but three sheltered beaches, as well as a bustling fishing harbour and an ancient château. Centrally located, the friendly 3-star Princes de Catalogne makes an excellent base, with comfortable, air-conditioned rooms. You stay on a bed and breakfast basis, leaving you free to choose your restaurant each day from among the many around the harbour – fresh fish and locally prepared anchovies are always good. Collioure is very busy and lively in July and August, when people linger at pavement cafés long into the evening.

Quercy Blanc

Manoir Saint Jean St Paul d'Espis
Lovingly converted from a 19th-century manor house by attentive host Anne-Marie Morgadès, the 3-star Manoir Saint Jean is both elegant and homely and boasts an outdoor pool. The nine suites are all different, decorated with great style and attention to detail, and throughout the hotel there is a sense of space and calm. The ochre-painted restaurant looks out to the extensive garden which is shaded by hundred-year-old trees, and it is here that you savour chef Stéphane Brisson’s well-crafted cuisine featuring the freshest of local produce such as free-range chickens, goat’s cheese and Quercy lamb. Fill your days with visits to ancient villages and attractive towns such as Montauban and Moissac, and boat trips along the Garonne (pay locally).

Cantal

Auberge de Concasty Boisset
The tranquil and highly praised 3-star Auberge de Concasty was originally a farm, and is set in its own grounds (complete with a pool) surrounded by meadows. You receive the warmest of welcomes from proprietor Madame Causse. Bedrooms are in the old stables as well as in the main house, and are all individually and beautifully styled. The sitting room has an inglenook fireplace, but the focus is on the beamed dining room, the setting for delicate and well-presented cuisine, with French windows leading on to the terrace. Enjoy a drink under the trees or by the pool. There is much to see in this little-known region – castles, dramatic gorges – and touring by car is a delight.

Le Calalou Moissac-Bellevue
The high-quality, 3-star Le Calalou nestles below the handsome hill-top village of Moissac-Bellevue. These are the hills of Provence, land of lavender, cork oaks and cicadas, close to the dramatic Verdon Gorge. The hotel has been built in the long, low style of a Provençal farmstead.
